Strawberry Chilli Jam

What you’ll need:

1.5kgs Fresh Stawberries

1.5kgs raw sugar

1tbs Cajun/chilli spice

1 pkt jam setta

2 tbs lemon juice

1/4 cup water

How to do it:

Clean and prepare jars with hot soapy water or put in the dishwasher, then place in the oven while you start the jam.  Boil lids in a big pot with boiling water for about 10 minutes, remove and place on a paper towel.

Clean wash and hull strawberries. I then process mine in the food processor by pulsing a few times.  Transfer to large pot and allow to heat slowly until bubbling away nicely.

You can then add the sugar and jam setta.  Bring up to the boil and start skimming away the scum from the edges. Allow to rapidly boil until you start to see set, or a wrinkle on the top of a dollop on a cold plate.

Funnel into sterile jars.

I have actually taken to processing the sealed jars in a boiling water bath for 10-15 minutes as well.

I got 5 375ml jars from this batch

The beginning!

My names Sarah, I’m a stay at home mum with 2 bubba’s.  I have a baking addiction, and will often bake at inappropriate times, like 15 minutes before dinner, I get an idea pop into my head….it drives my husband INSANE.  My oven is currently busted….I literally broke my oven from too much cooking. So instead of cooking I thought I would talk about cooking.

This is going to be a platform to hopefully record all that I bake and cook, as it is always changing.  I almost have an inability to follow recipes, due to 3 reasons: tripping over kids in the kitchen, lack of pantry supplies……or I think I can do it better, the latter remains to be seen.  Anyway it’s sort of a personal evolving cookbook for myself, or if someone asks me for the recipe of what I just baked, I can point them in this direction.  Cheers 🙂
