Sweet potato brownie


I must admit I was a bit sceptical when trying sweet potato brownies, but I needn’t have been.  the sweet potato is naturally so sweet, and texture does lend itself to being fudgy/brownie like.


1 Cup of steamed and mashed Sweet Potato

1/2 cup coconut oil

1 cup brown sugar

1/2 cup almondmeal

1/4 cup gluten free SR flour (or you could leave this out and make it 3/4 cup almondmeal)

pinch sea salt

1/2 tsp GF baking powder

2 eggs beaten

1tbs vanilla esc

140g /about 1/2 cup of dark choc bits, or 1/2 cup cocoa powder

How to do it:

preheat oven to 180c line a 25cm square tin

in a large bowl mix together all dry ingredients, melt down chocolate and coconut oil then mix in together. you will need to beat the living daylights out of it until it gets smooth and glossy.  if you want to add nuts you could add them in now.  pour into prepared tin and I like to strategically place some choc chips on the top, so it looks really naughty.

Bake for 30-40 mins when the top starts to crack slightly it usually means its ready.

They are great when warm out of the oven but best left to cool before cutting up, these brownies really are worth a try 🙂
