Puffed Rice Slice

I love having loads of stuff in the freezer to chuck in lunch boxes in the morning.   With no baking required this is usually one of them. Holds its shape well once out of the fridge.

Ingredients:

3 cups puffed rice

1/4 cup of the following: pepitas, sunflower seeds, Chia seeds, sesame seeds

1/2 cup sultanas

1/4 cup honey

1/4 cup rice malt syrup ( or you can leave this out if you don’t have it)

1/4 cup peanut butter (or any nut butter)

1/4 cup coconut oil

40g dark choc pieces/ or 1/2 cup cocoa

1 tsp vanilla esc

How to do it:


melt down all the wet ingredients together then add to the dry.

place in a lined slice tin approx 30cm by 20cms

use your hands to press down firmly to all the corners.  Allow to set in the fridge for several hours before cutting.  This hold shape well once out of the fridge, making it great for individually wrapping for lunches.
